Lemon Curry Chicken Salad

Ingredients:

¼ cup oil

4 tbsp frozen lemonade concentrate (thawed or fresh lemon juice)

¼ tsp ground ginger

¼ tsp curry powder

⅛ tsp garlic powder

1½ cups cooked diced chicken

½ cup sliced celery

1 cup canned peaches (drained)

Cooking Method:

  1. In a large bowl, mix the following ingredients well:
  • ¼ cup oil
  • 4 tbsp frozen lemonade concentrate
  • ¼ tsp ground ginger
  • ¼ tsp curry powder
  • ⅛ tsp garlic powder
  1. Add the remaining ingredients and toss lightly.
  2. Chill before serving.
